Yummy, Spinach noodles and Homemade Marinara Sauce

Absolutely amazing Ive never had homemade sauce and spinach noodles. The noodles were good. the sauce i made from a recipe online. Below is the recipe, I do not know where He got if from(my other half) but i would like to share it with you guys. 🙂 Like i said it is NOT my recipe!

Marinara Sauce

2-3 tbsp extra olive oil

3 tbsp mince fresh garlic

1 small carrot, grated

1 small yellow onion, finely choppped (optional)

1/4 tsp crushed red pepper flakes

6-ounce jar Bionaturae tomato paste (or 3 tbsp canned tomato paste)

1 cup Pomi strained chopped tomatoes (or 2 28oz cans whole San Marzano tomatoes crushed throughly by hand)

1 tsp dried oregano leaves

1/2 tsp dried thyme

1 bay leaf

1/2 tsp salt

1/4 tsp freshly-ground black pepper

1/4 cup chopped basil

Heat the olive oil on low in a large Dutch oven. Add the garlic, carrot, onion (if using) and crushed red pepper flakes. Cook, stirring, for 10 minutes (the garlic should not be brown)

Add the tomato paste, raise the heat to med and cook for 2-3 minutes. Add the tomatoes, oregano, thyme, bay leaf, salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes. Add fresh basil. Taste and add salt if necessary. remove bay leaf.
