Eating better.

I eat junk food every once in awhile…okay lately its a lot. But today I’m starting to get back on track. For dinner I made a simple zucchini pizza

1 Nann
1 zucchini
Half a tomato
Some salt
Some feta cheese
Olive oil

Get the nann and lightly spread on some olive oil. Not to much but just a light coat. Take a peeler and peel the zucchini into thin slices. Cover the nann and overlap the zucchini. A few inches above sprinkle with salt, use 3 fingers. Take the tomato and cut it up in little pieces. Put however much you want on it. Put in a toaster oven and heat for a few minutes, I did 4 minutes, didn’t want the zucchini all the way cook, love the taste of it raw. When done take some feta and spread some feta and slice it up. Yummy as heck 🙂 I hope you all enjoi. If you try different variations let me know in yhe comments below.

I was on Instagram and came acroos Bentos Monster’s pictures. Oh. My. Gosh. They look absolutely amzing. Shehas done an amazng job. I will be following her on IG and her blog. Challenge!

    
     Well I’ve decide to challenge myself. I don’t. Really curse., but I want to stop completely.  I also want to crochet/knit one thing a day. I wan to work out as well. I’ve rode my bike a lot lately and went for walk with some jogging.  Been moving heavy things. 
    
      My goal is to make 30 crocheted or knitted items, stop cursing or even writing it, and do at 30-60 min work out. Today starts it all. I will be busy with helping out at school and moving/cleaning but I need to make time to this.

Making Vegan Tortilla

Yummy!

I got tired buying tortillas and having a hard time getting them without lard. So I decide yesterday I was going to make them!! So here is the recipe

4 cups flours (any kind you want)
1 1/2 tsp salt
1 TBS baking power
3 TBS of olive oil, or any you want
1 cup water ( 1/2 set aside) of luke warm water

Combaine all ingredients in a bowl. Add the extra water slowly and don’t add any more. Knead until it one big dough ball.

Let stand, in the bowl, for about 30 minutes. Cover with a dampen towel.

Take some flour and put on the counter or table. Get a rolling pin and grab about a small ball of dough. Roll it out till its flattened.

Heat a skillet and put the dough tortilla in. Turn over when its starts to cook, it will bubble up.

There ya go! Vegan tortillas.
